The peppers in oil are coming directly from the fields of the farm “Le Lame” through the biodynamic cultivation method.
The peppers have the typical yellow and red colour of the ripe peppers. The slices of the peppers are covered by extra virgin olive oil in order to give a sweet taste but with a full bodied flavour.
The peppers are hand harvested in August and September. After they are washed and cut in slices the most important step happens: they are grilled. It is a difficult procedure performed only by the dedicated staff from the farm “Le Lame” in order to guarantee a delicious result. The product is then canned with extra virgin olive oil, salt and the aromatic herbs. The pots are then closed and pasteurised to guarantee the preservation without preservatives.
The grilled peppers can be used to inspire many recipes. They have to be always right at hand to support creativity while cooking and can help to organize a quick aperitif or dinner. Their taste is unique! They can be used to create fresh rolls with tuna and mint, for a salad with arugula, green tomatoes, and capers. They can also be used to prepare vegetarian( with tofu dices or seitan) or meat based (with pieces of grilles chicken breast or italian salsiccia) skewers.

The Farm Le Lame, located in the South of Apulia, in the middle of the Salento, practice biodynamic agriculture on its terrains. It has the Bio (C.C.P.B.) and DEMETER certificates. Since 1981 on Le Lame´s terrains, which surround the Masseria Lo Tenente -from the 800 century and built with walls of pietra a secco (typical bricks from the area)- the complex biodynamic agriculture is conducted. This method has in common with organic agriculture the prohibition of using chemicals both during fertilization and in killing parasites and weeds. However it is different from organic agriculture as it uses biodynamic preparations and a specific sowing calendar; moreover the farm is seen as a living organism, which health and vitality are under the human´s responsibility and on their conscience. Furthermore the Farm Le Lame performs the complete production chain on site. The vegetables and olives, and especially the tomatoes, are preserved in oil, converted in preserves, sauces or peeled plum tomatoes, jams, creams, pesto or paté.
