Details
Le Lame farmer dried tomatoes, are made as tradition wants. The intense taste and concentrated is given with drying process. The capers appetizing with oregano taste and garlic are dosed in a balance way, exalting tomato taste without covering.
Red color long tomatoes (san marzano variety) after hands harvest between July and August, are washed, cut, salted and sun dried. Dried tomatoes are vased with capers, oregano, garlic and covered with evo oil, then pastourized.
It is utilized for starter and side dish, appetising green salad, rice and potatoes, pizza and pasta salads dishes. We recommend using evo oil dressing, made by the same Le Lame farmer.

Manufacturer history
The Farm Le Lame, located in the South of Apulia, in the middle of the Salento, practice biodynamic agriculture on its terrains. It has the Bio (C.C.P.B.) and DEMETER certificates. Since 1981 on Le Lame´s terrains, which surround the Masseria Lo Tenente -from the 800 century and built with walls of pietra a secco (typical bricks from the area)- the complex biodynamic agriculture is conducted. This method has in common with organic agriculture the prohibition of using chemicals both during fertilization and in killing parasites and weeds. However it is different from organic agriculture as it uses biodynamic preparations and a specific sowing calendar; moreover the farm is seen as a living organism, which health and vitality are under the human´s responsibility and on their conscience. Furthermore the Farm Le Lame performs the complete production chain on site. The vegetables and olives, and especially the tomatoes, are preserved in oil, converted in preserves, sauces or peeled plum tomatoes, jams, creams, pesto or paté. All products are Demeter certified, as all the products from biodynamic agriculture. The farm´s mission is producing heathy food for the mankind and respecting the environment.From same manufacturer
